In the Old Testament males between ages of 20-60 were most valuable - fifty shekels - because they were the most fit to go to war.

God's estimation of each individual is measured by his or her ability to engage in spiritual warfare for the establishing of His kingdom

“if your valuation is of a male from twenty years old up to sixty years old, then your valuation shall be fifty shekels of silver, according to the shekel of the sanctuary.” - Leviticus 27:3

“from twenty years old and above — all who are able to go to war in Israel. You and Aaron shall number them by their armies.” - Numbers 1:3

Of course, in New Testament terms this is not limited by the same measure.
